Roast potatoes

I find Maris Piper to be the most consistent potato for roasting and I like to use a mix of sunflower and olive oils – flavoured with garlic and rosemary or thyme, depending on the meat. Don’t overcrowd the oven tray or the potatoes will steam rather than roast. Another tip is to leave them in the oven for a bit longer when they look ready – the finish will be spot on.

Ingredients

800g maris piper potatoes, peeled and halved if large
1 garlic bulb, cloves separated, 4 peeled
100ml sunflower oil
3 sprigs of thyme
or 3 or rosemary
100ml olive oil
sea salt
freshly ground black pepper

Method

  1. Preheat your oven to 200°C.
  2. Put the potatoes and peeled garlic cloves into a large pan. Add water to cover and some salt. Bring to the boil and simmer for 8 minutes until the potatoes start to soften.
  3. In the meantime, pour the sunflower oil into a large roasting tray, add the remaining unpeeled garlic cloves and put it into the oven to heat.
  4. Once the potatoes are ready, drain in a colander; pick out and discard the garlic cloves. Season the potatoes well with salt and pepper and leave them to dry in the colander for a few minutes.
  5. Add the herb sprigs to the hot oil in the roasting tray then carefully tip in the potatoes, taking care as the oil may spit. Roast for 15 minutes.
  6. Add the olive oil and turn the potatoes. Return to the oven for another 25 minutes, then turn the potatoes again; they should now be well coloured.
  7. Carefully drain off the oil from the tray and roast the potatoes for another 10–15 minutes until crisp and golden brown. Tip them into a colander lined with kitchen paper to remove any oil. Serve at once.
