Roast pork is incomplete without a generous dollop of apple sauce. Cooking apples are essential here, because dessert apples are far too sweet.

Ingredients

Quantity Ingredient
250g bramley apples, peeled, cored and chopped
3 tablespoons water
1/2 lemon, grated zest
30g unsalted butter
2 teaspoons caster sugar
A pinch sea salt

Method

  1. Put all the ingredients into a pan, cover and cook over a medium-low heat for 10 minutes until soft.
  2. Blitz the mixture in a blender, pound with a masher or just give it a good mix.
  3. Serve the sauce hot or cold. It will keep in a sealed jar in the fridge for up to 3 days.
