Ingredients

Quantity Ingredient
500g ripe tomatoes, roughly chopped
1 garlic clove, peeled and chopped
1 teaspoon chopped root ginger
6 cloves
6 allspice berries
6 black peppercorns
1/2 teaspoon cayenne pepper
60ml white wine vinegar
A pinch sea salt
100g caster sugar

Method

  1. Place all the ingredients except the sugar in a heavy-based pan, bring to a simmer and cook gently, uncovered, for 1 hour. Stir in the sugar and cook for a further hour until the mixture thickens.
  2. Strain through a sieve into a bowl and leave to cool. This relish will keep in the fridge in a sterilised container for a couple of weeks.
