Ingredients

Quantity Ingredient
1 large head garlic
olive oil, to drizzle
cornish sea salt

Method

  1. Heat your oven to 200°C. Lay a piece of foil on your work surface and sprinkle with 1 teaspoon of salt. Place the garlic bulb in the middle and drizzle with a little olive oil. Wrap in the foil and place the parcel on a baking tray. Bake for 20 minutes until the cloves are soft. Leave until they are cool enough to handle, then peel off the skin and chop or mash the flesh.

Roasted garlic cloves

  • You can roast cloves individually on a baking tray at 200°C for 15–20 minutes to use as a garnish.

Roasted garlic purée

  • Blitz the garlic pulp in a small blender until smooth. You can store the purée in a small jar covered with a thin film of olive oil in the fridge for up to a month.
