Ingredients

Quantity Ingredient
3/4 cup sugar
4 eggs
1 cup flour
1/2 teaspoon baking powder
1 large tablespoon butter
2 large tablespoon boiling water

Icing sugar

Quantity Ingredient
1 1/2 cups icing sugar, sifted
4 tablespoons butter, softened
2 passionfruit
pouring cream, to mix
whipped cream, to fill sponge

Method

  1. To make the cake, beat sugar and eggs very well. Fold in flour and baking powder then melted butter and lastly water.
  2. Bake at 160°C for 20 minutes.
  3. To make the icing, place icing sugar, butter and passionfruit pulp in mixing bowl. Mix well, adding cream to make it really light and creamy.
  4. Once cake has cooled, cut sponge in half and fill with whipped cream, then spread icing on top.
