Guacamole is guacamole – it’s standard worldwide – but adding mint gives a freshness to it. Avo can be super rich and the mint lifts it a bit. Also, nothing works to keep avos from browning; we’ve tried everything. Trust us, when you deal with hundreds of dollars’ worth of avocados every day, you’ve tried every old-wives’ tale in the book. The only way that kind of works is the plastic wrap trick. But really, the best fix is to just eat it right away. Why talk about keeping it? Shove it in your face.

Ingredients

Quantity Ingredient
3 avocados
1/2 red onion, finely chopped
small handful mint, chopped, plus extra leaves for garnish
small handful coriander, chopped
1 teaspoon salt flakes
1/4 teaspoon cracked black pepper
1 lime, juiced
1-2 teaspoons your favourite hot sauce, (we prefer to use a green hot sauce)
pepitas, for garnish
olive oil, for drizzling
tortilla chips, to serve

Method

  1. Mash the avocado flesh in a medium-sized bowl until almost smooth but with still a few chunks in it.
  2. Stir in the remaining ingredients and adjust the seasoning, to taste.
  3. If not eating straight away, cover the surface of the guacamole with plastic wrap to keep oxygen from discolouring the avocado.
  4. Garnish with a few pepitas and mint leaves, and drizzle over a little olive oil. Serve with tortilla chips for the perfect starter, but obviously put this on everything.
