Chargrilled asparagus with romesco sauce & aioli

When customers need a good justification for ordering mountains of fried potatoes, meatballs and corn chips with queso dip you give them asparagus! And you chargrill it, and add one of the world’s most delicious, complex and rich sauces, romesco, and throw in aioli for good measure. That’s what we did here. Everyone loves having that little bit of additional green in front of them to make them feel that much better about themselves. Plus, it’s really, really tasty.

Ingredients

Quantity Ingredient
4 bunches asparagus, woody ends snapped off
olive oil
Smoky romesco
small handful parsley, roughly chopped, to garnish (optional)
sea salt flakes
Garlic aioli
1 lemon, cut into wedges or chargrilled, to serve

Method

  1. Bring a large saucepan of water to the boil and throw in a small handful of salt.
  2. Meanwhile, heat a chargrill pan over high heat or a barbecue to high.
  3. Blanch the asparagus in the boiling water for 1 minute, then drain well, transfer to a bowl and drizzle with enough olive oil to lightly coat. Season, to taste.
  4. Place the asparagus on the chargrill pan or on the barbecue and cook until toasty chargrill marks appear on all sides.
  5. Place a hefty schmear of romesco sauce across a serving plate on the diagonal, then place the asparagus in a bundle across it. Sprinkle over the parsley (if using) and a few sea salt flakes. Serve with the garlic aioli on the side and lemon wedges or a chargrilled lemon half for squeezing over.
