Hands down, top summer salad. Give us nothing but this if the temperature reaches beach weather. Please. Thank you.

Ingredients

Quantity Ingredient
2 baby cos lettuce, leaves separated and rinsed
1 radicchio, leaves separated and rinsed
1 lebanese cucumber, sliced
2 large handfuls pickled radishes
small handful Pickled onions (& other stuff)
1 avocado, roughly diced
see method for ingredients
small handful dill, chopped

Method

  1. Place the lettuce and radicchio leaves in a large serving dish, then scatter over the cucumber, pickled radish and onion, and avocado.
  2. Drizzle with enough of the dressing to lightly coat the salad, then sprinkle over the dill. Season to taste, and serve.
