One of our most popular cocktails in the summer time. What you love about a mojito and a mule, all topped with sparkling. Can’t go wrong.

Ingredients

Quantity Ingredient
6-8 mint leaves, plus extra sprigs, for garnish (optional)
45ml dark rum
15ml lime juice, plus a lime wheel, for garnish (optional)
15ml simple syrup
2 dashes bitters
ice
60ml sparkling wine

220g sugar

Method

  1. To make the simple syrup, place the sugar and 250 ml water in a small saucepan and bring to the boil. Reduce the heat to low and simmer until the sugar is completely dissolved. Set aside to cool, then pour into a glass bottle.
  2. Half-fill a stemless wine glass with ice.
  3. Muddle the mint leaves in a cocktail shaker. Add the rum, lime juice, syrup and bitters, then fill with ice and shake.
  4. Single strain into the chilled wine glass and top with the sparkling wine. Garnish with some extra mint and a lime wheel, if desired.
