This delicious cocktail is worth a special mention as it’s our signature drink. It’s everything you want in a margarita and more – refreshing, spicy, savoury, sweet – and it even makes you enjoy tequila. We have numerous tequila converts based on this drink alone.

Ingredients

Quantity Ingredient
chilli salt
small handful roughly diced cucumber, plus an elongated slice, for garnish (optional)
3 coriander sprigs
3 slices jalapeno, plus extra, for garnish (optional)
50ml tequila blanco, (at the restaurant we use Tromba Blanco)
20ml agave syrup
30ml lime juice
ice cubes

Method

  1. Dip the moistened rim of a martini glass in chilli salt until well coated.
  2. Muddle the cucumber, coriander and jalapeño in a cocktail shaker. Add the tequila, agave and lime juice, then fill with ice and shake hard for a minimum of 10 seconds.
  3. Double strain into the martini glass and serve garnished with the slice of cucumber and jalapeño, if desired.

Note

  • Chilli salt can be found at any Latin supermarket, or you can simply use salt.
