A very quick and easy soup to put together. You can swap the noodles to suit whatever you have on hand and replace the bok choy with other Asian greens, if you like.

Ingredients

Quantity Ingredient
1.5 litres vegetable or chicken stock
2 tablespoons miso paste
2 tablespoons tamari
1 skinless chicken breast fillet, thinly sliced
200g baby bok choy, leaves separated
250g udon noodles
1 small handful coriander leaves

Method

  1. Pour the stock into a large heavy-based saucepan and bring to the boil over high heat. Mix the miso paste and tamari together and add to the boiling stock.
  2. Add the chicken and simmer for 5 minutes. Add the bok choy and noodles, and cook for 1–2 minutes. Serve in bowls. garnished with the coriander leaves.

Variation

  • Udon soup with shiitake mushrooms and roast duck

    To boiling miso add 150 g sliced shiitake mushrooms and 1 cup sliced broccoli. Cook for 2 minutes. Add 200 g sliced cooked duck and 2 thinly sliced spring onions (scallions). Return to the boil then remove from the heat. Add coriander (cilantro) leaves and check seasoning.
