Ingredients

Quantity Ingredient
400g pasta of your choice, such as linguine or spaghetti
8 slices prosciutto
olive oil, for cooking
1 onion, diced
125ml chicken stock
175g asparagus, woody ends trimmed, cut into 2 cm chunks
4 tablespoons thickened cream
freshly ground black pepper
2 tablespoons chopped mint
freshly grated parmesan cheese, to serve

Method

  1. Bring a large saucepan of water to the boil over high heat. Add a good pinch of salt. Add the pasta and stir until the water has returned to the boil. Reduce the heat, cover the pan and cook the pasta at a fast simmer for 8 minutes.
  2. Meanwhile, heat a heavy-based frying pan over medium–high heat. Cook the prosciutto slices for 1–2 minutes on each side, or until crisp. Set aside on paper towel.
  3. Add a splash of oil to the pan and the onion and cook for 3–4 minutes.
  4. Add the stock and bring to the boil, then add the asparagus. Cook for 1–2 minutes, then add the cream and cook rapidly for 1–2 minutes to reduce. Season with the pepper and add the mint.
  5. Drain the pasta well and toss with the sauce. Add 2 pieces of crisp prosciutto to each bowl and serve with the parmesan.
