A family favourite that is less rich than traditional recipes. The addition of broccolini makes it healthier, too.

Ingredients

Quantity Ingredient
400g pasta of your choice, such as spaghetti or linguine
oil, for cooking
1 onion, diced
175g shortcut rindless bacon, diced
4 tablespoons chicken stock
200g broccolini, trimmed and cut into 2 cm lengths
3 tablespoons thickened cream
freshly ground black pepper
2 tablespoons chopped flat-leaf parsley
freshly grated parmesan cheese, to serve

Method

  1. Bring a large saucepan of water to the boil over high heat. Add a good pinch of salt. Add the pasta and stir until the water has returned to the boil. Reduce the heat, cover and cook the pasta at a fast simmer for 8 minutes.
  2. Meanwhile, heat a medium-sized frying pan over medium–high heat. Add a splash of oil and the onion and cook for 3–4 minutes. Add the bacon and cook for 3–4 minutes until it starts to turn golden brown.
  3. Add the stock and bring to the boil, then add the broccolini. Cook for 1–2 minutes, then add the cream and cook rapidly for 1–2 minutes to reduce. Season with the pepper and add the parsley. Drain the pasta well and toss with the sauce. Serve with the freshly grated parmesan.

Variation

  • Smoked chicken and pea carbonara Substitute chopped smoked chicken for the bacon, and peas for the broccolini.
