I think of this stew as glammed-up baked beans! it’s really quick to prepare and is the sort of thing i might serve for dinner if we have had a big lunch.

Ingredients

Quantity Ingredient
oil, for cooking
2 chorizo sausages, sliced
1 onion, diced
2 garlic cloves, crushed
250ml see method for ingredients
250ml chicken stock
400g tinned cannellini beans, rinsed and drained
salt and freshly ground black pepper
2 tablespoons chopped flat-leaf parsley

Method

  1. Heat a large heavy-based saucepan over medium–high heat. Add a splash of oil and the chorizo and cook for 5–6 minutes until golden brown, stirring often. Remove the chorizo from the pan and drain away the excess fat.
  2. Add the onion to the pan and cook for 3–4 minutes, or until soft. Add the garlic and cook for 1–2 minutes, or until fragrant.
  3. Return the chorizo to the pan, then add the tomato purée, stock and beans and bring to the boil. Season with the salt and pepper, then reduce to a simmer and cook for 15–20 minutes, stirring often. Check the seasoning then add the parsley and serve with crusty bread.
