Ingredients

Quantity Ingredient
1 teaspoon sichuan pepper
2 teaspoons sesame oil
1 teaspoon chinese five-spice powder
2 tablespoons honey
salt
500g pork fillet
oil, for cooking

Method

  1. Heat a small heavy-based saucepan over medium–high heat and toast the Sichuan pepper until fragrant. Crush using a mortar and pestle.
  2. Mix the crushed pepper with the sesame oil, five-spice powder, honey and salt. Brush over the pork and leave to marinate for 20 minutes, time permitting.
  3. Preheat the oven to 180°C. Heat a heavy-based frying pan over medium– high heat and add a splash of oil. Drain excess marinade from the pork fillet and cook for 6–8 minutes, or until golden brown, turning once or twice. Be careful as the honey can burn easily.
  4. Transfer to a baking tray and cook in the preheated oven for around 5 minutes, depending on the thickness of the fillet. Leave to rest in a warm place, covered, for 5 minutes. Slice thickly and serve with steamed rice.
