Romesco is a little like a spanish-flavoured pesto, and is absolutely amazing served with barbecued chicken, seafood and lamb. it will keep for several weeks in the refrigerator.

Ingredients

Quantity Ingredient
500g minced lamb
50g dry breadcrumbs
1 egg
1 garlic clove, crushed
salt and freshly ground black pepper
oil, for cooking
Romesco sauce

Method

  1. To make the patties, combine the lamb, breadcrumbs, egg and garlic in a large bowl and season with the salt and pepper. Shape the mixture into 4 patties.
  2. Heat a barbecue grill until hot. Brush the patties lightly with oil, then cook for 5–6 minutes on each side. Serve with the romesco sauce.
