Ingredients

Quantity Ingredient
olive oil
4 onions, sliced
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon sweet paprika
150g baby spinach leaves, chopped
salt and freshly ground black pepper
3 tablespoons chopped coriander leaves
400g tinned chickpeas, rinsed and drained
1 egg
150g dry breadcrumbs

Method

  1. Heat 3 tablespoons of olive oil in a medium saucepan over low heat. Add the onions and cook for 15–20 minutes, stirring often, until the onions soften but do not colour.
  2. Add the spices and cook for 1–2 minutes. Add the spinach then remove the pan from the heat and stir until the spinach wilts. Season well with the salt and pepper and add the coriander leaves. Allow to cool slightly, then stir in the egg, chickpeas and enough breadcrumbs for the mixture to hold together. Shape into 12 patties.
  3. Heat a barbecue plate until hot. Brush the patties lightly with olive oil and cook for 6 minutes, rotating once. Turn the burgers over and cook for a further 6 minutes, rotating once. Serve straight away. Delicious with yoghurt dressing.
