You can use this spice mix on any cut of lamb, from leg and topsides to chops or fillets. lamb racks are a little pricey, which makes this more of a dinner party dish.

Ingredients

Quantity Ingredient
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 teaspoon harissa paste
1 lemon, grated zested
2 tablespoons olive oil
1-2 tablespoons pomegranate molasses
2 x 8 point racks of lamb

Method

  1. Preheat the oven to 180°C.
  2. Mix together the spices, harissa paste, lemon zest, oil and pomegranate molasses. Rub all over the lamb. Cook in the oven for 20–30 minutes.
  3. To check if the lamb is done, insert a small kitchen knife into the centre of a lamb rack and count to five. If the knife is warm, the meat is rare. If it’s bearably hot, the meat is medium. If necessary, cook for a further 5 minutes and test again.
  4. Once the lamb racks are cooked to your preference, remove them from the oven, cover with foil and leave to rest in a warm place for 10 minutes before carving. Serve with couscous salad with roasted vegetables or Moroccan spiced lentils.
