Baked salmon with herbs and lemon

Ingredients

Quantity Ingredient
1 x 15kg side of salmon, pin bones removed
2 tablespoons olive oil
1 tablespoon chopped flat-leaf parsley
1 tablespoon chopped dill
2 teaspoons chopped mint
2 lemons, grated zested and juiced
salt and freshly ground black pepper

Method

  1. Preheat the oven to 200°C. Line a baking dish with baking paper.
  2. Place the salmon in the prepared baking dish and rub all over with olive oil. Scatter on the herbs and lemon zest and season with the salt and pepper. Bake for 15–20 minutes, depending on the thickness of the salmon, until the fish is just cooked, but still a little pink in the centre.
  3. Remove from the oven and squeeze the lemon juice over. Serve with boiled minted potatoes, a green salad and lemon mayonnaise.
