A summery dessert that makes the most of the season’s fruit. peaches and raspberries are a classic combination.

Ingredients

Quantity Ingredient
24cm sheet butter puff pastry
Raspberry sauce
2 peaches
1 egg yolk
2 tablespoons milk
caster sugar, to sprinkle

Method

  1. Preheat the oven to 180°C. Line a baking tray with baking paper.
  2. Cut the pastry sheet into 4 squares. Place a spoonful of raspberry sauce in the centre of each square.
  3. Cut the peaches in half, then peel them and remove the stones. Thinly slice each peach half and arrange them neatly on the pastry squares.
  4. Beat the egg yolk with the milk and brush the exposed pastry edges. Fold them in to form a border. Lift onto the prepared baking tray, sprinkle with caster sugar and bake in the oven for 20–25 minutes, or until crisp and golden brown. Serve with your choice of whipped cream or ice-cream.
