Ingredients

Quantity Ingredient
200g dark chocolate, chopped
250ml thickened cream
3 egg yolks

Method

  1. To melt the chocolate, place it in a bowl set over a saucepan of simmering water and stir until melted and smooth. Allow to cool slightly.
  2. Whip the cream until soft peaks form.
  3. Gently whisk the egg yolks into the melted chocolate. Stir in a spoonful of whipped cream to lighten the mixture, which helps to fold in the remaining cream without losing the airiness.
  4. Gently fold in the remaining cream. Spoon into a serving dish and refrigerate for 2–3 hours, or overnight, to set. Delicious served with fresh raspberries and cream.

Variations

  • Chocolate coffee

    Add 2 tablespoons of strong black coffee to the melted chocolate along with the egg yolks.

    Chocolate brandy

    Add 2 tablespoons of brandy to the melted chocolate along with the egg yolks.

    Jaffa

    Add the finely grated zest of 2 oranges to the melted chocolate.
