Ingredients

100g white chocolate
3 tablespoons thickened cream
75g caster sugar
500g cherries, halved and pitted
25g shredded coconut
4 large scoops vanilla ice-cream

Method

  1. Make a white chocolate ganache by combining the white chocolate and the cream in a saucepan over medium heat. Stir until the chocolate has melted, then whisk until smooth and set aside. (But use within about 45–60 minutes or it will thicken and set firm.)
  2. Combine the caster sugar and 75 ml of water in a saucepan. Cook over a low heat until the sugar dissolves, stirring occasionally until the liquid is clear. Once the sugar has all dissolved, raise the heat and bring to a boil, then cook for 5–6 minutes, or until it forms a light syrup. Add the cherries, return to the boil and then remove the pan from the heat. Drain the cherries and reserve the syrup.
  3. Preheat the oven to 180°C. Line a baking tray with baking paper. Spread the shredded coconut in a single layer on the baking tray. Bake for 10–15 minutes, or until light golden brown, checking frequently to prevent burning. Remove from the oven and leave to cool before using.
  4. To serve, spoon the vanilla ice-cream into four tall glasses. Top with a layer of white chocolate ganache, followed by cherries and toasted coconut. Continue layering until you fill the glasses, then drizzle with some of the reserved syrup.
