I always try to have good-quality butter puff pastry on hand in the freezer, which makes it really easy to whip up an impressive dessert such as this one.

Ingredients

Quantity Ingredient
24cm sheet butter puff pastry
100g unsalted butter, softened
110g caster sugar
1 lemon, grated zested
2 egg yolks
100g almond meal
300g frozen berries

Method

  1. Preheat the oven to 200°C. Line a baking tray with baking paper.
  2. Place the puff pastry on the prepared baking tray and prick it all over with a fork. Place another tray on top of the pastry to weight it down and bake in the oven for 15–20 minutes, until brown and cooked through.
  3. To make the frangipane, beat the butter with the sugar and lemon zest until creamy. Add the egg yolks and almond meal and stir to combine. Spread a thin layer of frangipane over the cooked pastry sheet and scatter the berries over the top. Bake for 25–30 minutes, or until lightly browned. Serve with your favourite ice-cream.
