I love cardamom and add it to many recipes, both sweet and savoury. this is one of my favourites.

Ingredients

Quantity Ingredient
90g unsalted butter, plus extra, for greasing
90g brown sugar
1 teaspoon ground cardamom
6 ripe pears

Method

  1. Preheat the oven to 180°C. Place the butter in a small saucepan with the brown sugar, ground cardamom and 185 ml of water and bring to the boil. Reduce the heat and simmer for 5 minutes.
  2. Grease a deep baking dish with butter.
  3. Peel the pears, then cut into quarters and slice out the cores. Arrange in the baking dish and pour on the sauce. Bake in the oven for 30–40 minutes, basting occasionally.
  4. Serve the pears warm with plenty of sauce and top with a dollop of mascarpone or cream.
