Smoked tomatoes with basil vinaigrette, shanklish and sumac

It’s true, I love smoked foods – they add a beautiful roundness to dishes, and this recipe stands to this belief.

Ingredients

Quantity Ingredient
4 Smoked tomatoes, each cut into 5 slices
150ml Basil cordial
75ml olive oil
1/2 lemon, juiced
3 basil leaves, washed and finely shredded
1 ball mild shanklish, (see glossary)
1 teaspoon ground sumac, (see glossary)
1 tablespoon flat-leaf parsley, chopped

Method

  1. Arrange the smoked tomatoes on a plate. In a bowl, mix together the cordial, olive oil, lemon juice and basil. Season with salt flakes and freshly ground black pepper, then drizzle over the tomatoes.
  2. Crumble the shanklish all over the tomatoes and around the plate. Sprinkle with the sumac and parsley and serve.
