Salad of Parma ham, melon and radicchio

As a professional cook, you get those flashback moments from kitchens of the past. Time goes so quickly and you work so long you forget most of the dishes you have cooked, but you remember the base recipes and skills. This is one of those flashbacks from Restaurant Martin Wishart. We used to make a similar salad to this, using duck prosciutto, replaced here with Parma ham.

Ingredients

Quantity Ingredient
50g caster sugar
1/4 rockmelon, peeled, seeded and cut into 2 cm cubes, around 350 g
1 small handful baby rocket leaves, washed
3 red radicchio leaves, tough white rib removed, then washed and shredded
1 head frisee, washed, (see glossary), yellow part only
6 thin slices parma ham, prosciutto or jamon
2 tablespoons toasted and crushed macadamia nuts
1/4 honeydew melon, peeled, seeded and cut into 2 cm cubes, around 350 g

Creamy nutty lemon dressing

Quantity Ingredient
50ml olive oil
50ml hazelnut oil
50ml walnut oil
1/2 lemon, juiced
50ml sherry vinegar
1 teaspoon salt flakes
5 good turns black pepper
50ml pouring cream

Method

  1. To make the dressing, put the oils, lemon juice, vinegar, salt and pepper in a bowl. Whisk together and set aside.
  2. Heat a large frying pan over a medium heat and add the sugar. Let the sugar dissolve, and when it turns to a light caramel colour, throw in all the melon and stir until the melon starts to warm. Cook to caramelise one side of the melon pieces. Take off the heat, remove the melon from the pan and keep warm.
  3. Add the dressing to the pan and leave to cook until reduced to one-third. Now add the cream and whisk until fully combined. Take the dressing off the heat, but keep it warm.
  4. Have the salad leaves in a mixing bowl and dress with some of the warm dressing. Gently toss in the warm melon pieces, then arrange on your platter or serving plates.
  5. Layer the ham over the top and sprinkle the macadamias over. Drizzle with a little more dressing and serve.
