Something simple to have in the pantry to sprinkle over crisp-fried squid or fried fish with a squeeze of lime juice. Or toss with cashews or peanuts for snacks.

Ingredients

Quantity Ingredient
200ml canola oil
10 dried long red chillies, seeded
1 tablespoon sea salt
230g caster sugar

Method

  1. Heat the oil in a saucepan over a medium– high heat and fry the chillies until they turn a deep red, for 10 seconds. Remove and drain on paper towel.
  2. Pound the chillies and salt in a mortar and pestle to a fine powder. Add the sugar and mix through. The mixture should have a deep red tinge and a hot, sweet, salty taste. Store in an airtight container in the cupboard for up to 4 weeks.
