Ingredients

Quantity Ingredient
1 lebanese cucumber, diced
1 red asian shallot, peeled and finely sliced
2.5 cm piece fresh ginger, peeled and julienned
1 long red chilli, seeded and julienned
1 small bunch coriander, leaves picked
1 quantity Sweet vinegar

Method

  1. Toss the cucumber, Asian shallot, ginger, chilli and coriander leaves together in a mixing bowl, then stir into the sweet vinegar. Serve immediately.
