This is an easy to serve all-year-round starter, rather like fish pie, which can also be served as a main with salad. Try to buy the good-quality salt cod pieces that are normally sold in good Spanish or Portuguese delis rather than the big West Indian stuff that resembles cricket bats and needs days of soaking.

Ingredients

Quantity Ingredient
250g boneless salt cod, soaked overnight and rinsed thoroughly several times
250g potatoes, peeled and sliced
6 garlic cloves, peeled and sliced
1/2 bay leaf
A pinch cayenne pepper
200-300ml milk
100ml double cream
40g fresh white breadcrumbs
30g butter, melted
30g mature cheddar, finely grated
or 30g parmesan, finely grated

Method

  1. Place the soaked, well rinsed salt cod in a saucepan with the potatoes, garlic, bay leaf and cayenne pepper. Cover with the milk, bring to the boil and simmer for 8–10 minutes, or until the potatoes are well cooked. Remove the cod and potatoes with a slotted spoon and set to one side. Preheat the oven to 200°C.
  2. Put the potato and half the cod into a food processer and blend coarsely with enough of the hot milk to make a sloppy purée. Flake the rest of the cod into the mix, season to taste and stir in the cream. Transfer to a large oven-proof dish or individual serving dishes.
  3. Mix the breadcrumbs, cheese and butter together in a bowl. Scatter the breadcrumb mixture over the fish mixture and bake in the oven for about 20–25 minutes, until nicely browned and hot in the middle. Serve immediately.
