  1. Whisk 1 teaspoon Dijon mustard with 100 millilitres good-quality aged sherry vinegar (Romulo), 100 millilitres hazelnut oil and 150 millilitres extra virgin olive oil in a bowl. Season to taste with Murray River pink salt and freshly ground black pepper.
