Let’s start with orange, but also consider grapefruit (ruby and golden), mandarin and lemons (Meyer and lemonade). All will do very well with this basic curd recipe. Again, for those who wish to, or who have no freezing device, it would be perfectly acceptable and delicious to stop at the curd. For those who don’t and do, frozen Nirvana awaits.

Ingredients

Quantity Ingredient
500ml orange juice
55ml lemon juice
395g caster sugar
18 eggs
350g cold butter, diced

Method

  1. Put the orange juice, lemon juice, sugar and eggs in a heatproof bowl and whisk to combine.
  2. Put the bowl over a saucepan of simmering water and whisk constantly until the mixture reaches 80°C. Remove the bowl from the heat and slowly add the butter, allowing each piece to be fully incorporated before adding the next.
  3. When the ingredients are combined, pass the curd through a fine sieve. Place in the refrigerator until cold.
  4. Churn in an ice cream machine according to the manufacturer’s instructions.

Note

  • Nothing else required, except a spoon – and beware brain freeze.
