Ingredients

Quantity Ingredient
2 cups sugar
2 tablespoons light corn or golden syrup
2/3 cup milk
40g unsweetened chocolate
1/4 cup butter
1 teaspoon vanilla essence

Method

  1. Put the sugar, syrup, milk and chocolate in a large saucepan. Place over gentle heat, until the sugar is dissolved. Cook until a small amount forms a soft ball when dropped into cold water. Stir occasionally to prevent catching. Remove from heat, add butter without stirring, and cool until lukewarm. Add vanilla and beat until creamy and barely holding shape. Spread quickly on cake.
