Green onion dipping sauce

Ingredients

Quantity Ingredient
4 tablespoons peanut or rice bran oil
1 teaspoon salt
6 spring onions, finely sliced
2 tablespoons finely chopped fresh ginger

Method

  1. Heat the oil in a small saucepan over a high heat and when almost smoking, remove from the heat and carefully add the salt, spring onions and ginger.

To chop a chicken

  • Place chicken on a strong wooden board and split into halves, using a heavy cleaver. Remove the wing joints (reserving them), then the marylands, chopping each thigh section in three and each drumstick in two. Arrange these pieces on a serving platter. Chop away and discard excess bone from the two breast pieces, then cut each across into 2 cm slices. Arrange on top of the first lot of chicken. Finish with the wings.
