Ingredients

Quantity Ingredient
500g fresh or frozen raspberries
1/4 cup lemon juice
1 1/2 cups caster sugar

Method

  1. Combine the raspberries and lemon juice in a large microwave-proof bowl. Microwave on high (100 per cent) power for 5 minutes. Stir in the sugar. Cook on high for another 15–20 minutes, stirring every 5 minutes. Spoon into a sterilised jar, cover and cool before storing.
