Zucchini tastes and looks quite different when grated and heated through in foaming butter. If you wish, the watercress or lettuce may be left out and the quantity of zucchini increased to 750 g. Leave the green skin on for colour.

Ingredients

Quantity Ingredient
500g zucchini
salt
60g watercress or lettuce, shredded
60g butter
freshly ground black pepper
pinch nutmeg

Method

  1. Grate zucchini on coarse side of a hand grater, or with coarse grating attachment of a food processor. Toss with a little salt and stand for 30 minutes in a colander or sieve to drain.
  2. Rinse under cold water and dry using paper towels. Fold watercress or lettuce through zucchini.
  3. Heat butter and, when foaming, put in vegetables. Toss with 2 forks over medium heat. When very hot, season with salt, pepper and nutmeg. Serve immediately.
