Ingredients

Quantity Ingredient
500g zucchini, thinly sliced lengthways
2 teaspoons salt
75g plain flour
freshly ground black pepper
oil, for deep-frying

Method

  1. Place zucchini in a colander, sprinkle with salt and leave to drain for 1 hour. Rinse in cold water, drain and dry well using paper towels. Combine flour and black pepper, and shake zucchini slices lightly in flour mixture.
  2. Heat oil in a deep saucepan and deep-fry zucchini for about 1 minute or until golden, crisp and tender. Fry slices in 4 or 5 batches to prevent their sticking together. Drain on crumpled paper towels and serve immediately, with a grinding of black pepper.
