Stir-fried beans and water chestnuts

Ingredients

Quantity Ingredient
1 tablespoon cornflour
125ml chicken stock
1 tablespoon oil
500g green beans, cut into 5 cm lengths
1 teaspoon sugar
230g tinned water chestnuts, drained, and sliced if whole
1 tablespoon dry sherry
light soy sauce
rice, steamed and hot, to serve

Method

  1. Mix cornflour with 1 tablespoon chicken stock. Heat oil in a wok or heavy frying pan, add beans and stir-fry over moderate heat for 3 minutes.
  2. Stir in sugar, water chestnuts, remaining stock and sherry. Cover and simmer for 2 minutes. Add soy sauce to taste. Stir cornflour mixture again, add to pan and stir until beans are lightly glazed. Serve immediately on hot steamed rice.
