Excellent with sausages or with roast duck, pork or game.

Ingredients

Quantity Ingredient
1/2 large red cabbage, cored and finely shredded
1/2 teaspoon salt
freshly ground black pepper
pinch nutmeg
1 small onion, finely chopped
30g butter
2 teaspoons white wine vinegar
250ml red or white wine
250ml water
1 large green apple, peeled, cored and diced

Method

  1. Drop cabbage into boiling water and boil for 10 minutes, then drain well. Season with salt, pepper and nutmeg and set aside.
  2. Cook onion in butter until soft but not brown. Add vinegar, wine, water and cabbage. Cover and simmer for 30 minutes. Add apple and cook for 25–30 minutes longer, adding a little more water if drying out.
