Ingredients

8 chicken pieces
freshly ground black pepper
3 tablespoons oil
4 large tomatoes, peeled, seeded and coarsely chopped
1 large green pepper, seeded and cut in julienne strips
90g mushrooms, sliced
185g ham, diced
125ml dry white wine
1 tablespoon parsley, chopped
salt
1 large red pepper, seeded and cut in julienne strips

Method

  1. Season chicken with salt and pepper and brown in oil, using a large, heavy saucepan. Add tomatoes, peppers, mushrooms and ham and pour wine over. Cover and simmer for 25–30 minutes or until chicken is tender.
  2. Arrange chicken pieces on a heated platter and keep warm. Boil sauce until slightly reduced, taste and adjust seasoning and pour over chicken. Sprinkle with parsley and serve.
