250g minced pork
2 tablespoons soy sauce
1 teaspoon brown sugar
1 teaspoon salt
250g frozen spinach, thawed
40 wonton wrappers
oil, for deep frying

Method

  1. Combine pork, soy sauce, brown sugar and salt in a bowl and mix well. Squeeze spinach to remove excess water and dry in paper towels to remove as much moisture as possible. Chop very finely. Add to pork mixture and mix thoroughly.
  2. Place about ½ teaspoon of mixture in centre of each wonton wrapper. Dampen edges with water, gather edges and sides together to enclose filling in a little parcel, and press firmly together to seal.
  3. Heat oil to moderately hot and deep-fry wontons (a few at a time) for about 5 minutes or until golden brown. Drain on crumpled paper towels and serve with Chinese chilli sauce or sweet and sour sauce.
