Ingredients

500g mushrooms
1 garlic clove
250g fresh or preserved vine leaves, blanched
olive oil
freshly ground black pepper
salt

Method

  1. Remove and chop mushroom stems finely with garlic. Place vine leaves in layers in bottom of an oiled flameproof dish. Cover them with a film of olive oil and place over moderate heat until oil is hot.
  2. Add mushroom caps, stalk side up, cover dish with a lid or foil and cook in a preheated moderate oven (180°C) for 20 minutes. Remove from oven. Add chopped stems and garlic, and season with salt and pepper. Return to oven and cook for a further 10 minutes. Serve hot as a first course.
