Add a few drops of this hot vinegar to fresh chutneys that are to accompany curries or use when you want a hot, spicy salad dressing.

Ingredients

Quantity Ingredient
4-6 fresh chillies
or 1 tablespoon dried chillies
500ml malt vinegar
or 500ml white vinegar

Method

  1. Put chillies into a sterilised jar. Bring vinegar to the boil and pour over chillies. Cool, cover and store for 5–6 weeks before use, shaking jar occasionally.
