A Scottish version of fudge. Take care to stir gently or the mixture will become grainy before it has caramelised thoroughly.

Ingredients

Quantity Ingredient
310ml milk
880g sugar
60g butter
400g sweetened condensed milk
1/4 teaspoon natural vanilla extract
walnut halves, to decorate

Method

  1. Combine milk, sugar and butter in a heavy saucepan. Stir over low heat for about 20 minutes or until sugar dissolves, then stir in condensed milk and bring to the boil.
  2. Boil steadily over medium heat for about 25 minutes or until dark golden brown. Add vanilla and stir well.
  3. Remove from heat and allow to cool for a few minutes. Beat with a wooden spoon or hand-held electric beater for about 10 minutes or until mixture is thick.
  4. Pour into a well-greased 28 × 19 cm lamington tin. Place walnut halves on top, mark into pieces with a knife and leave to cool. When set, break into squares.
