One of the simplest and best ways to feast on tomatoes in summer when they, and basil, are in season.

Ingredients

Quantity Ingredient
4 ripe tomatoes, thickly sliced
2 teaspoons wine vinegar
1/2 teaspoon dijon mustard
freshly ground black pepper
pinch sugar
1 1/2 tablespoons olive oil
2 tablespoons fresh basil leaves, cut into fine ribbons
salt

Method

  1. Place tomato slices in a shallow dish. Mix vinegar with mustard, salt, pepper and sugar in a small bowl, and beat in oil little by little to make a thick dressing. Spoon over tomatoes and scatter with basil.
