Ingredients

Quantity Ingredient
440g sugar
190ml cold water
1 tablespoon vinegar

Method

  1. Place all ingredients in a heavy 2 litre saucepan. Stir over medium heat until sugar has dissolved. Bring to the boil, without stirring, and cook until syrup is golden brown. Remove from heat and allow bubbles to settle.
  2. Pour into small paper cases (standing in metal pans), or pour into an oiled 18 cm square shallow tin, cool for 5 minutes and mark into squares with an oiled knife.
