1/2 quantity Biscuit pastry
12 teaspoons jam such as apricot, raspberry, strawberry, blackberry

Method

  1. Roll out pastry dough thinly and use to line 12 shallow tartlet tins. Prick bases and put 1 teaspoon jam into each.
  2. Roll pastry trimmings and cut narrow strips to make pastry crosses on top of jam, if liked; press ends onto edges.
  3. Chill for 20 minutes, then bake in a preheated moderate oven (180°C) for about 15 minutes.
