Serve on ice cream or on poached fruit.

Ingredients

Quantity Ingredient
110g sugar
125ml water
125ml dry white wine
6 tamarillos, skinned and puréed
1 teaspoon lemon juice
2 teaspoons brandy
125ml cream

Method

  1. Heat sugar, water and wine together, stirring until sugar has dissolved. Bring to the boil and boil for 5 minutes.
  2. Add tamarillo purée and simmer until reduced and a little thickened. Stir in lemon juice and brandy. Cool and chill. At serving time, whip cream until it just holds its shape and fold into tamarillo mixture.
