Ingredients

1 large onion, finely chopped
2 garlic cloves, crushed
30g butter
3 large tomatoes, peeled, seeded and chopped
1 small red pepper, cored, seeded and cut into short strips
60g ham or prosciutto, cut into strips
1 teaspoon tomato paste
2 eggs, beaten
125ml cream
80g fresh breadcrumbs
1 tablespoon parmesan cheese, grated
freshly ground black pepper
1 x 23 cm shell Plain shortcrust pastry
1 small green pepper, cored, seeded and cut into short strips

Method

  1. Cook onion and garlic in butter until soft but not browned. Remove from heat and add tomatoes.
  2. Blanch peppers in boiling water for 5 minutes and drain. Add peppers, ham, tomato paste, eggs, cream, breadcrumbs, cheese, salt and pepper to tomato mixture and mix lightly.
  3. Turn into tart shell and bake in a preheated moderately hot oven (190°C) for about 40 minutes or until filling is set and pastry golden.
