A Welsh fruit bread packed with flavour.

Ingredients

Quantity Ingredient
300g self-raising flour
pinch salt
1 teaspoon mixed spice
60g butter
75g sugar
1 lemon, zested
90g sultanas
90g black treacle
1 egg, beaten
1/2 teaspoon bicarbonate of soda
125ml milk

Method

  1. Sift flour, salt and spice into a bowl. Rub in butter until mixture resembles fine breadcrumbs. Stir in sugar, lemon zest and sultanas. Add treacle and egg.
  2. Dissolve bicarbonate of soda in milk, add to flour mixture and mix until well blended. Turn into a greased and lined 21 × 15 cm loaf tin.
  3. Bake in a preheated moderate oven (180°C) for about 1¼ hours or until a skewer inserted in centre comes out clean. Turn onto a wire rack to cool. Wrap in foil and store for 24 hours before serving, sliced and buttered.
