For steak or hamburgers.

Ingredients

Quantity Ingredient
125ml red or white wine or dry vermouth
freshly ground black pepper
30g butter, cut into pieces
salt

Method

  1. Cook steaks or hamburgers in a little oil and butter, then remove to a hot dish. Slowly pour off fat from pan. Add wine or vermouth and bring to the boil over high heat, stirring and scraping up brown bits from bottom of pan.
  2. When liquid is reduced by about half, season with salt and pepper and remove from heat. Add butter pieces. Do not stir but swirl butter in by swinging pan in a circular motion. Pour over meat and serve immediately.
